Description
Named in honor of Queen Victoria, this classic British treat embodies simplicity at its finest: luscious strawberry jam and velvety cream nestled between airy sponge cakes, lightly dusted with icing sugar. Perfect for baking novices, indulge in a slice or two as you brew a pot of tea.
Instructions
- Pre heat oven to gas 3, 170°C, fan 150°C. Grease & line 2 x 8 inch (20cm) spring form cake tins with nonstick baking paper.
- In large mixing bowl, cream together butter, vanilla extract & sugar using an electric hand held whisk, until light & fluffy. Add lightly beaten egg a tablespoon at a time, beating well between additions, until fully incorporated. Carefully fold flour in using large metal spoon & spoon the batter evenly in to two prepared cake tins.
- Bake for 25 to 30 mins, until springy to touch & a cake tester comes out clean when inserted in to centre of cakes. Remove & allow tins to cool on wire rack for 5 mins before turning out & peeling away nonstick baking paper.
- Whip cream to soft peaks as cakes cool, then spread bottom half of cake with cream in an even layer. Spread strawberry jam evenly & carefully on top of cream. Sandwich cake with the other half of cake & transfer carefully to serving plate. Dust with the icing sugar & serve.

- Double cream - 100ml
- Strawberry jam - 125g
- Icing sugar - 1 tbsp (for dusting)
