Description
Indulge in almond florentines: a symphony of caramelized almonds, butter, sugar, and a hint of vanilla, baked to crispy perfection. A swift treat for discerning palates.
Instructions
Toast the nuts and seeds (optional, but adds extra flavor):
- Pre-heat oven to 350 F (180 C). Spread almonds & seeds on baking sheet & bake for 10 mins, or until nicely golden brown. Remove from oven & set aside
- Lower oven temperature to 300 F (150 C). Line the baking sheet with parchment paper & lightly brush with a bit of oil to prevent sticking
Prepare the "batter":
- Mix egg white with icing sugar with a fork, until egg whites are kinda frothy. Add rest of ingredients & stir to combine everything. Make sure they are really well combined & egg white mixture coats all nuts & seeds
Baking:
- Use spoon to scoop-up mixture on a prepared pan & then use back of the spoon to spread it thin without any gaps, about 3inch in diameter. Repeat with rest of mixture
- Bake in pre-heated oven for 20 to 25 minutes, or until they are golden-brown. Check bottom of florentine, it they are not browned yet, bake a bit longer
- They appear to be soft-out from oven. Let them cool on pan for 5 mins & then transfer to cooling rack to let them cool down completely. They will be crispy once cooled down
If you want to dip in or spread with chocolate (optional):
- Melt chocolate in microwave for 20 to 30 secs & then stir until smooth. Dip half of crispy florentine in chocolate & place on cooling rack to let chocolate sets. You can also use spoon to spread some chocolate on top of florentine crisps & let chocolate sets at room temperature
Storing:
- Store them in an air tight container & they can stay crispy for 5 days (it was about a week for me)

Ingredients
- Egg white from 1 large egg - 30 gr (about 57 grams with shell)
- Confectioners' sugar - 50 gr (about 1/3 cup)
- Sliced almonds - 60 gr (about 3/4 cup)
- Pepita seeds - 70 gr (about 1 cup)
- Black sesame seeds - 10 gr (1 Tbsp + 1 tsp), or you can use mixture of black & white sesame seeds
- Salt - ¼ tsp
- Zest of half large orange or orange extract - 1/2 tsp
- Cooking oil for brushing
- Semi-sweet chocolate chips - 50 gr (Optional)
