Description
One of the Premium Punjabi curries, if not the king of the paneer curries.
Instructions
Instructins for Gravy base:
- Firstly, in large Pan heat 2 tablespoons oil & 2 tablespoons butter.
- Add 2 pods cardamom, 5-cloves & saute on low flame, till it turns aromatic.
- Now add 2 clove garlic, 2 onion, & 1 inch ginger.
- Saute till onions shrink slightly.
- Further add 15 cashew, 3-tomato & saute for 2 mins.
- Cover & boil for 10 mins, or till tomatos softens.
- Cool completely & transfer to blender & blend to smooth paste.
- Pass curry to filter to get rid of skin & seeds.
- Smooth & silky, the tomato onion paste is ready. keep it aside.
Instructins for Gravy base:
- First of all, in large Pan heat 2 tablspoons of oil, 2 tablespoons butter, 1 bay leaf & 1 chilli. saute till spices turn aromatic.
- Now add 1-onion & saute till onions turn & golden brown.
- Keeping flame on low, add 1 teaspoon chilli powder, ½ teaspoon turmeric, ¾ teaspoon coriander powder, ½ garam masala, ¼ teaspoon cumin powder & 1 teaspoon salt.
- Saute till spices turn aromatic. Make sure not to burn the spices.
- Add in prepared onion-tomato paste & mix it well.
- Now add 1-cup water & mix well adjusting consistency.
- Further, add in 2 tablespoons cream & mix well.
- Then, add 16-cubes paneer & mix gently.
- Simmer for 5 mins, or till the paneer absorbs flavour.
- Add 1 teaspoon kasuri-methi & 2 tablespoon coriander. Mix them well.
- Finally, enjoy paneer butter masala with Hot roti or naan.

- Butter - 2 Tablespoons
- Bay leaf - 1
- Chilli - 1
- Chilli powder - 1 teaspoon
- Cumin powder - ¼ Teaspoon
- Coriander powder - ¾ Teaspoon
- Garam masala - ½
- Water - 1 Cup
- Cream - 2 tablespoon
- Kasuri methi - 1 teaspoon
- Coriander - 2 tablespoons (finely chopped)
