Description
A soft oatmeal cookie studded with chocolate chips, peanut butter chips, & toffee bits.
Instructions
- Preheat your oven to 350°F and prepare a baking sheet by lining it with parchment paper. Set it aside for later use.
- In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar for about 2 minutes until smooth and creamy.
- Next, add the eggs and vanilla extract to the creamed mixture, and mix until well combined, ensuring to scrape down the sides of the bowl with a spatula to incorporate all ingredients evenly.
- Now, add the all-purpose flour, rolled oats, baking soda, ground cinnamon, and salt to the mixture. Stir until all ingredients are fully incorporated. Then, gently fold in the semi-sweet chocolate chips, peanut butter chips, and toffee bits until evenly distributed throughout the dough.
- Using a 1/4 cup measure, portion the cookie dough into balls and place them onto the prepared baking sheet. Flatten each ball into a thick disk using the palm of your hand. You can fit about 6 cookies per baking sheet.
- Sprinkle a pinch of flaky sea salt over the tops of each cookie for added flavor dimension.
- Bake in the preheated oven for 9-11 minutes, or until the edges are set and lightly golden brown. The centers may still appear slightly underdone, but they will continue to cook on the baking sheet after removal from the oven.
- Once baked, remove the cookies from the oven and allow them to cool on the baking sheet for 5-10 minutes before transferring them to a wire rack to cool completely. This ensures they set properly and develop the perfect texture. Enjoy your delicious crumbly cookies!

- To prepare the toffee bits, you have the option to purchase pre-made toffee bits or create your own by chopping up Heath bars.
