Instructions
- Boil the milk in a heavy-bottomed pot over medium heat.
- Once the milk comes to a boil, add vinegar or lemon juice slowly and stir gently. The milk will start to curdle.
- Turn off the heat and let it sit for a minute.
- Line a sieve with a muslin cloth and strain the curdled milk.
- Rinse the cheese under cold water to remove the vinegar or lemon juice taste.
- Squeeze the cheese to remove excess water and hang it for 30 minutes.
- After 30 minutes, knead the cheese well until it is smooth.
- Divide the cheese into small equal-sized balls and flatten them slightly.
- In a separate pot, add sugar, water, crushed cardamom pods, and saffron strands.
- Bring the mixture to a boil, stirring occasionally.
- Add the flattened cheese balls to the boiling mixture and cover the pot with a lid.
- Cook the cheese balls in the boiling mixture for 10-12 minutes or until they are soft and spongy.
- Turn off the heat and let the ras malai cool in the syrup.
- Garnish with chopped almonds and pistachios.
- Serve the delicious homemade ras malai chilled.
