Description
A great Chow Mein that truly rivals Chinese resturents comes down to the sauce! Make this with your protein of choice.
Instructions
SAUCE
- Mix together soy sauce & cornflour, also mix in remaining ingrediants.
- Alternative: Use 1/3 mug Chinese All Purpose Stir Fry Sauce, if you have some in stock.
Chicken & Noodles
- Marinate Chicken: Pour 1 tablespoon of Sauce over the chicken, mix to coat, set away to marinate for 10 mins.
- Noodles: Prepare the noodles according to the packet instructions (my pack says soak in boiled water for 1 min), then drain.
COOKING
- Heat Oil in wok or large frying-pan over high heat.
- Add garlic and stir fry for 10 sec. or until it starts to turn golden – do not let it burn!
- Add chicken & stir fry until the surface gets a tinge of browning but inside is still raw – about 1 min.
- Add the carrot, cabbage & the white pieces of shallots( i.e. from the base of the stalk). Stir fry for 11/2 mins until the cabbage is mostly wilted.
- Add the Sauce, noodles, and water *. Stir fry for 1 min, tossing constantly.
- Add bean sprouts and remaining shallots/ scallions. Toss through for 30 seconds or until the bean sprouts just start to wilt.
- Remove from heat and serve immediately.

Ingredients
- Chow mein noodles - 200g /6 oz
- Chicken breast or thigh fillets , thinly sliced - 200g /6 oz (Note 1 tenderise option)
- Garlic , finely chopped - 2 Cloves
- Green onions , 3 (cut into 5cm/2″ pieces)
- Green cabbage , finely shredded - 4 Cups
- Peanut oil (or other cooking oil) - 1-1/2 tablespoon
- carrot , julienned - 1
- Bean sprouts - 1-1/2 Cups
- Water - 1/4 cup (65 ml)
- Chow mein Sauce:
- Chinese cooking wine OR Mirin - 1-1/2 tablespoon
- Soy sauce - 1-1/2 tbsp (all purpose or light)
- Cornflour / Cornstarch - 2 tablespoon
- Sugar - 2 tablespoon (reduce to 1 tablespoon if using Mirin)
- Oyster sauce (sub Hoisin) - 1-1/2 tablespoon
- Sesame oil - 1/2 tablespoon
- White pepper (sub black)
