Description
Wholesome chickpea salad: mix chickpeas, diced veggies, herbs, and a zesty dressing. Bursting with flavor, it's a nourishing dish perfect for satisfying any appetite, light yet satisfying.
Instructions
- In large bowl, combine lemon juice, Dijon, garlic, Aleppo pepper, sumac, and salt & pepper (about 1/2 teaspoon each). Whisk & slowly pour in enough olive oil to make it glossy & balanced. Continue to whisk until emulsified.
- To bowl with the dressing, add the chickpeas, cucumbers, tomatoes, roasted bell peppers, onion, parsley, & mint. Toss gently.
- Add avocado & toss very gently once more.
- Taste & adjust seasoning to your liking & serve immediately.

- Red onion or 2 shallots - 1 small, finely chopped
- Chopped parsley leaves - 1 cup
- Chopped mint leaves - 1/2 cup
- Avocado - 1, (pitted and roughly chopped)
