Description
Creamy dessert of soaked ladyfingers surrounded by lightly sweet-whipped cream & a rich mascarpone, tiramisù depends on the quality of its ingredients.
Instructions
- Using a mixer in a medium bowl, whip together ¼ cup/50 grams sugar & egg yolks until about tripled in volume & very pale yellow. A slight ribbon should fall from the beaters (or whisk attachment) when lifted from the bowl. Transfer mixture to a large bowl, wiping out the medium-bowl used to whip the yolks and set aside.
- Take a medium bowl, whip remaining (¼ cup/50 grams) sugar & cream until it creates soft-medium peaks. Add mascarpone and continue to whip until it creates a spreadable, soft mixture with medium peaks. Gently fold the mascarpone mixture into sweetened egg yolks until well mixed.
- Combine espresso and Cognac in a shallow bowl, then set aside.
- Using a sifter, dust the bottom of a 2-quart baking dish with 1 tablespoon cocoa powder.
- Working one at a time, quickly dip each ladyfinger into the espresso coffee mixture, they're quite porous & will fall a part if left in the liquid too long & place them rounded side up at the bottom of the baking dish. Repeat, using half ladyfingers, until you have got an even layer, breaking the ladyfingers in half as demanded to fill in any obvious gaps ( a little space in between is alright). Spread half the mascarpone mixture on the ladyfingers in one even layer. Repeat with remaining espresso- dipped ladyfingers & mascarpone mixture.
- Dust top-layer with the remaining teaspoon of cocoa powder. Top with shaved or finely grated chocolate, if required.
- Cover with plastic -wrap & let chill in the refrigerator for at least 4hours ( if you can stay 24 hours, all the better) before slicing or scooping to serve.

- Very strong or Good espresso coffee - 1¾ cups
- Cognac - 2 Tablespoons
- Unsweetened cocoa powder - 2 Tablespoons
- Ladyfingers - About 24 (200-gram package/from one 7-ounce)
- Bittersweet chocolate - 1 to 2 Ounces for shaving (optional)
