Description
An Irish ancestors brought this recipe, when they immigrated to U.S. Start it at least five days ahead to spice & tenderize the meat, the flavors are worth it.
Instructions
- Place the beef in 15x10x1-inch. baking pan, rub with the brown sugar. Refrigerate, covered, 24 hours.
- In small bowl, combine chopped onion, salt, bay leaves & seasonings, rub over beef. Refrigerate, covered, 3 days, turning & rubbing salt mixture into beef once each day.
- Pre-heat oven to 325°. Remove & discard salt mixture. Place onions, carrots, beef, celery & stout in roasting pan. Add water to come half-way up brisket. Roast, covered, 4-4-1/2 hours or until, meat is tender. Cool meat in cooking juices for 1 hour.
- Remove beef, discard vegetables & cooking juices. Transfer beef to 13x9-inch baking dish. Refrigerate, covered, overnight.
- Cut diagonally across grain into thin slices. Serve with rye bread, cheese & mustard.

- Fresh Beef brisket - 1 (6 pounds)
- Packed brown sugar - 1/3 Cup
- Chopped onion - 1/4 Cup
- Coarse sea salt - 3/4 Cup
- Bay leaves - 4 (Crushed)
- Pepper - 3 Teaspoons
- Ground allspice - 1-1/2 Teaspoons
- Ground cloves - 1-1/2 Teaspoons
- Dried rosemary - 2 Teaspoons (crushed)
- Dried thyme - 2 Teaspoons
- Celery ribs - 2 (sliced)
- Medium onions - 4 (sliced)
- Medium carrots - 4 (sliced)
- Stout or beef broth - 2 Cups
- Optional: Rye bread, Swiss cheese slices & Dijon mustard
