Description
A simple Italian Dish Pasta recipe, Homemade Potato Gnocchi. A simple tomato sauce makes these soft, delicate Gnocchi, delicious Dinner idea.
Instructions
GNOCCHI
- In large pot, boil potatoes till tender, remove from pot & let cool, remove the skin. Then pass through a potato ricer.
- Mix together salt & flour, place on flat surface, make well in middle & add potatoes & egg, mix together with your fingers to form soft dough, it shouldn't stick to your fingers. On lightly floured-surface, cut small amounts of dough to form ropes & cut into 3/4 inch (2 cm) pieces, then slide each piece on fork & squeeze little (but not too hard). Sprinkle with little bit of flour & toss, so they donot stick together. Let gnocchi rest for 20 mins before cooking.
TOMATO SAUCE
- While gnocchi are resting, make the sauce. In large saucepan, add tomatoes, olive oil, salt, garlic, basil, oregano, hot pepper flakes & water, stir to mix, half cover & let simmer over medium-heat till thickened. Remove cover for last few mins to thicken.
COOKING GNOCCHI
- In large pot of salted boiling water, cook the gnocchi, gnocchi are ready when they float to top. Drain & add to cooked sauce, add little pasta water, cook for 30 secs, gently tossing. Serve immediately topped with fresh-grated parmesan cheese, if desired. Enjoy!

- FOR THE GNOCCHI
- Salt - 1/2 Teaspoon
- Potatoes - 1 Pound (clean but not skinned / not new potatoes)
- Flour - 1 Cup
- Medium egg - 1 (room temperature)
- FOR THE SAUCE
- Salt - 1/2 Teaspoon
- Olive oil - 2 Tablespoons (40 grams)
- Oregano - 1 Teaspoons
- Cloves large of garlic - 1-2 (chopped)
- Basil leaves chopped - 5 (or 1 teaspoon /3/4 gram dried)
- Dashes of hot pepper flakes - 2 (if desired)
- Pelati tomatoes with sauce - 1 can (1 1/2 to 2 cups / 400 grams), nothing else added in the tomatoes
- Water - 1/2 cup
