Description

Instructions
For Chips
- Heat the oven to 200 F.
- Heat oil in deep fryer until the temperature reaches over high heat until it reaches 325 degrees F.
- Thoroughly drain the sliced potatoes & blot them with paper tissue to remove excess water. Once the oil is 325 F carefully fry the potatoes in the small batches to avoid overcrowdness & fry for 2-3 mins until softened & pale. Use a slotted spoon to remove them from oil & let them cool to room temperature.
- Increase the temperature to 375 degrees F. Carefully add fries again, frying in batches, until they are crispy & golden brown, another 2 - 3 mins. Remove with slotted-spoon, place on a baking sheet or roasting rack, sprinkle with salt while they are still very hot, & place them in the warmed oven while you are frying the fish.
For Fish
- Combine salt, baking powder & flour in a large bowl. In another large bowl add some extra flour for dredging.
- Blot the fish with paper tissue (or paper towel) to remove excess moisture. Thoroughly dredge all sides of fish in flour and shake off the excess.
- For Frying the Fish, You can use a deep fryer (or) you can use a medium sized skillet & fill it with oil to a depth of nearly an inch.
- Heat the oil to between 350 F & 375 F, using a thermometer. Carefully put the fish into the oil.
- Fry the fish in deep fryer for 5 - 8 mins or until golden. If using a frying pan fry the fish for about 2 mins on each side or until golden. Remove the fish with slotted spoon, letting the oil drop off, then place the fried fish on paper tissue for a few seconds & serve immediately. (If you wait too long to serve it will lose its crispiness.)
- Serve with chips, a sprinkling of quality malt vinegar & if desired a serving of authentic Mushy Peas. You can also eat the fish with the Tartar Sauce.

- Salt - 1 Teaspoon
- All-purpose flour - 1 Cup
- Baking powder - 1 Teaspoon
- Oil for frying
- Extra flour for dredging - chilled
- Use beef tallow instead of oil for the best traditional flavor
- Fresh cod - 1-1/2 pounds (haddock or halibut , (or other firm-fleshed white fish), cut into 4 pieces and patted dry (important for enabling the batter to adhere))
- for CHIPS
- Large potatoes - 4 or other high starch/low moisture potato , peeled, sliced thickly and put in a large bowl of cold water until ready to fry
- Salt for sprinkling
- Quality Malt Vinegar , for serving
- Oil for frying
