- Begin by preheating your oven to 200C/400F/Gas 6, and prepare a baking tray with a layer of greaseproof paper.
- Combine the flours and baking powder in a bowl, then integrate the diced lard and butter, gently rubbing until achieving a breadcrumb-like texture.
- Introduce the sugar, orange zest, lemon zest, cinnamon, nutmeg, and assorted dried fruits, blending thoroughly.
- Next, add the cream and half of the beaten egg, incorporating until a cohesive dough forms. Divide the dough into six equal portions, shaping them into sizable rounds about 2cm/1in thick, and position them on the prepared baking tray.
- Brush the remaining beaten egg atop the 'rascals,' then embellish with glacé cherries and blanched almonds.
- Place the tray in the oven and bake for 15-20 minutes, or until the 'rascals' boast a delightful golden-brown hue. Once done, allow them to cool slightly.
- Indulge in their warmth, serving alongside clotted cream, strawberry jam, and a spread of butter for a truly delightful treat.
