If you're a fan of hearty one-pot dishes, you've come to the perfect recipe! This Hashweh Rice is a Middle Eastern delight, combining ground beef, vegetables, and rice in a single pot. Seasoned with aromatic spices, it exudes the essence of comfort food. What makes it even better is the use of frozen vegetables, ensuring I always have the necessary ingredients on hand. It's a win-win situation that's both convenient and delicious!
Instructions
- Start it by dicing onions finely
- To a nonstick pan (preferable), add vegetable oil & onions then cook on medium heat for 5 mins, until onions are softened slightly
- Add ground beef & break it down using a wooden spoon. Cook-it on medium heat for 7-10 Mins, until browned & juices it released start to dry up
- Add all spices along with frozen vegetables. Stir to combine & continue to cook for 5 to 7 Mins, until the mixture looks dry & not much moisture is left
- Wash basmati rice several times, until water runs clear & drain it well
- Add rice to pot along with water. Mix well, to combine & ensure water covers all of rice mixture completely
- Turn heat to medium high & allow mixture to start bubbling, this should take only few minutes. As soon as it starts bubble, cover immediately, & decrease heat to low
- Leave rice to cook undisturbed for 20 Mins
- Meanwhile, toast almonds in a pan with ½ tablespoon of oil, until golden brown. Once they are done, add raisins in there to warm them through. Chop your parsley if using.
- After 20 mins, turn off heat & leave pot covered for further 10 mins
- Open pot & fluff rice with fork then serve with garnish on top
NOTES
- Recipe makes a big batch & you can halve it, if required
- Measurements are exact for white basmati rice. You can try other types of rice, such as brown rice but must use more water & double cooking time
- It is important that once you cover the rice & set heat to low, you do not uncover it for 20 mins! The steam needs to stay inside pot to properly cook the rice
