Description
Indulge in the irresistible flavors of homemade Aloo Samosas, a delectable appetizer sure to tantalize your taste buds with its crispy pastry and flavorful potato filling.
Instructions
- Combine flour, oil, salt, carom seeds, and water in a bowl. Knead the ingredients into a smooth, firm dough. Cover with a cloth and set aside. Aim to knead for at least 15 minutes for optimal results.
- Peel & chop potatoes in to small bite sized pieces
- In a large saucepan, add potatoes & cover with cold water, then bring to a boil & allow to simmer for 5 to 7 Mins, until potatoes are soft & tender
- As potatoes are boiling in pan, heat up oil on medium heat, until hot
- Add cumin seeds & sauté for 1 min, until fragrant
- Add finely diced onion & cook for few mins, until it softens & becomes translucent
- Add peas & cook for further few mins
- Add then turmeric powder, salt, crushed chilli flakes, chilli powder & garam masala & cook these spices for a few mins, you may need to add a little water to help spices release all their colours & prevent burning
- Drain cooked potatoes & add in to the mixture, then gently mix & break apart the potatoes
- Add finely chopped green chilli & coriander, then stir before removing from heat & allowing filling to cool down
- Take dough & make small smooth balls with it, you should be able to make 8 to 10 balls depending on your personal preference on how big you want your samosas
- Roll the dough balls into circles, ensure that you don't make them too thin (or) else they will tear when you add filling
- Cut into half & take one half
- Using water to seal the edge create a cone
- Add cooled mixture in to the cone ensuring that it is not overfilled, then seal top with water, at this point the samosas can be frozen
- Heat pan with oil for deep frying, until medium, hot ensuring that the oil is not too hot, to test this you can add a small ball of the dough in to the pan, & it should rise with tiny bubbles surrounding it
- Gently add samosas into the pan, there should be tiny bubbles surrounding them, & allow them to cook undisturbed for 3 to 4 mins, until golden brown before flipping & allowing to cook for another 3 to 4 mins, until golden brown on the other side
- Serve alongside some hari green chutney & enjoy
